Pork and Black Bean Tostadas
Looking for a little crunch? These super-simple tostadas can please even the pickiest of eaters.
Ingredients
- 1 lb fully cooked pork roast (or butt)
- 1 (15-oz) can black beans, drained and rinsed
- 6 tostada shells
- 3/4 cup crema (or sour cream)
- 1 teaspoon chipotle pepper sauce (+ more if desired)
- 1 1/2 cups shredded lettuce
- 1 cup fresh diced tomatoes
- 1/2 cup salsa verde
- 1 cup queso fresco
Instructions
- Preheat oven to 350°F. Microwave pork on HIGH for 2–3 minutes or until hot. Drain and rinse beans. Shred pork with 2 forks.
- Arrange shells on baking sheet. Stir together crema and chipotle sauce in small bowl. Spread 2 tablespoons chipotle crema dip in center of each shell; top with even amounts beans and pork. Bake 5–7 minutes until tostadas are crispy.
- Top tostadas with lettuce, tomatoes, salsa, and queso fresco. Serve.
