  • 1 medium onion
  • 2 carrots
  • 2 celery stalks
  • 2 1/2 lb beef chuck short ribs
  • 2 teaspoons kosher salt
  • 3 tablespoons vegetable oil
  • 2 cups red wine
  • 3 cups beef broth
  • 1 tablespoon apple cider vinegar
  • 8 cloves garlic
  • 3 tablespoons tomato paste
  • 1/4 cup guava paste
  • 1 teaspoon pepper
  • 1 teaspoon chipotle chili powder
  • 1/4 teaspoon cayenne pepper

  1. Chop onion, carrots, and celery into bite-sized pieces. Preheat large Dutch oven on medium-high 2–3 minutes. Season ribs with salt. Place oil in pan; cook ribs 4–5 minutes on all sides or until browned.
  2. Stir in remaining ingredients. Reduce heat to medium-low; cover. Simmer 1 1/2–2 hours or until ribs are tender. Serve with your favorite rice dish.
