  • 2 limes, for juice
  • 1/2 cup fresh cilantro
  • 1/4 cup extra-virgin olive oil
  • 4 cloves garlic
  • 1 tablespoon red wine vinegar
  • 1 teaspoon adobo seasoning
  • 1/2 serrano pepper, seeds and membrane removed, coarsely chopped
  • 1 green onion, coarsely chopped
  • 1 lb peeled/deveined rock shrimp, tails removed (thawed, if needed)
  • 3 tablespoons unsalted butter
  • 2 teaspoons sazón seasoning

  1. Prepare sauce. Squeeze limes for juice (1/4 cup). Add to bowl of food processor: cilantro, oil, garlic, lime juice, vinegar, adobo, serrano pepper, and onion. Blend 1–2 minutes until completely smooth.
  2. Prepare shrimp. Preheat large sauté pan on medium for 2–3 minutes. Add shrimp, butter, and sazón to pan; cook 3–4 minutes, stirring occasionally, until shrimp are pink and opaque. Serve shrimp in Mofongo cups with garlic-cilantro sauce.
