Vegetarian Arroz con Leche
There’s always room to brighten the family table with this classic dish.
Ingredients
- 1 cinnamon stick
- 3 cups water
- 1 cup white rice
- 4 cups unsweetened vanilla nondairy milk
- 3/4 cup sugar
- 1/2 cup raisins, optional
Instructions
- Combine in medium sauce pot: cinnamon stick, water, and rice until blended. Bring to a simmer on medium; cook 15 minutes then stir in milk. Simmer 15 more minutes, stirring occasionally.
- Stir in sugar and continue simmering 10 more minutes, stirring occasionally, until rice is tender and liquid has thickened.
- Remove pot from heat; stir in raisins (if desired). Set aside 10 minutes to cool (liquid will thicken as it cools). Remove cinnamon stick before serving.
