  • 1 cinnamon stick
  • 3 cups water
  • 1 cup white rice
  • 4 cups unsweetened vanilla nondairy milk
  • 3/4 cup sugar
  • 1/2 cup raisins, optional

  1. Combine in medium sauce pot: cinnamon stick, water, and rice until blended. Bring to a simmer on medium; cook 15 minutes then stir in milk. Simmer 15 more minutes, stirring occasionally.
  2. Stir in sugar and continue simmering 10 more minutes, stirring occasionally, until rice is tender and liquid has thickened.
  3. Remove pot from heat; stir in raisins (if desired). Set aside 10 minutes to cool (liquid will thicken as it cools). Remove cinnamon stick before serving.
